Chicken and Greens with Tortellini
Yesterday I had a craving for greens cooked in bacon drippings. I blame the craving on listening to country music while gardening.
I had planned to serve a Strawberry Spinach Salad and Tortellini with Alfredo Sauce, but I couldn’t get over my craving for greens. So I decided to try combining the spinach and tortellini to create a new main course. Although no bacon drippings were involved in the preparation of this dish it was surprisingly delicious.
Ingredients:
2 tablespoons olive oil
1/2 medium onion, coarsely chopped
4 garlic cloves, minced
1 1/2 cups chicken broth
2 cups frozen tortellini (GF tortellini is available at health food stores)
1 cup cooked chicken, diced
1 lb. greens (spinach, Swiss chard, kale, beet or collard greens)
Directions:
Heat oil in a large skillet. Add onion and garlic and sauté until onion is translucent.
Add broth and bring to a boil. Add tortellini and simmer for 3 minutes. Stir in Chicken.
Add greens and slowly work under the chicken and tortellini. Cook until all of the greens are wilted.
I still have Chris Young’s Voices stuck in my head which is a bit unnerving.

This looks and sounds delicious! I'm definitely going to try this (once we get some greens growing in the garden – it's still almost too cold to plant anything here).
