Every year, I make Corned Beef, Potatoes, and Cabbage for my husband. And every year, I am left with some leftover corned beef. I usually just make corned beef sandwiches for my husband, but this year I was inspired by Aunt B on a Budget to make a casserole using the leftover corned beef. I also used some leftover mashed potatoes, fresh cabbage, and gravy made from the Corned Beef drippings. The Corned Beef and Cabbage Casserole with Mashed Potato Crust was absolutely delicious! I think I liked it even more than the original dish.
