Peppermint Bark is the easiest candy to make. It only requires 3 ingredients and there are no candy thermometers involved. You don’t even have to turn on your stove if you melt the chocolate in the microwave.
An Offset Spatula is useful for spreading the melted chocolate out, but it isn’t necessary.
Place candy canes in a plastic bag, seal it and then use a potato masher to crush the candy canes.
Because the semi-sweet chocolate will be frozen, the white chocolate will firm up faster. So spread it quickly. The melted white chocolate may also begin to melt the semisweet chocolate. Don’t worry if you notice a bit of dark chocolate mixing with the white chocolate – just keep going, don’t try to fix it! The broken candy cane pieces will hide any thin spots.
- 12 oz. semisweet chocolate pieces
- 12 oz. white chocolate pieces
- ½ cup crushed candy canes ( 6 -8 candy canes)
- Line a baking sheet with parchment paper
- Melt semisweet chocolate pieces in the microwave according to the directions on the package.
- Spread melted chocolate out on the parchment paper.
- Place baking sheet in the freezer for 30 minutes.
- Crush candy canes while the semisweet chocolate is freezing.
- Melt white chocolate pieces in the microwave according to the directions on the package.
- Spread melted white chocolate out on top of the dark chocolate. Sprinkle crushed candy canes over the top of the white chocolate.
- Place baking sheet in the freezer for 30 minutes.
- Remove the bark from the freezer and break into pieces.
- Store in an airtight container.

I blame you for wasted time. I came into my office over an hour ago to take a re-look at the quantities so I could put together this recipe. I proceeded to do some church database work, and then – the ultimate time eater – Facebook. Walked back into the kitchen *without* the recipe, but noticed my chocolate and peppermint on the counter.
Oh, yeah! THAT’s what I was going to do!
What can you do if the white bark is too thick. I melted it in a double boiler.
Add a little bit of shortening or coconut oil (~1 tablespoon) to thin it. If you don’t have shortening, add a milk product, just a little bit at a time until it reaches the desired consistancy. Do not add water, it causes it to thicken even more.
