Gluten-Free Caramel Apple Snack Cake

- ¼ butter, softened (I used Earth Balance to make this dairy free)
- ½ cup apple sauce
- 1½ cups brown sugar
- 2 eggs
- ¾ cup white rice flour
- ¾ cup tapioca flour
- ½ cup potato starch
- 1 teaspoon xanthan gum
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 medium apple, peeled and diced
- ½ cup pecans, chopped

- Preheat oven to 350 degrees. Grease a 13 x 9 baking pan.
- In a large bowl, combine the butter, applesauce, and brown sugar. Stir in eggs
- In a small bowl, combine rice flour, tapioca flour, potato starch, xathan gum, baking powder, and salt.
- Add the flour mixture to the wet ingredients and blend together.
- Stir the apple and pecans into the batter.
- Pour batter into a greased 13x9 baking pan.
- Drop caramel by the spoonful onto the batter. Run a knife through the caramel to make swirls in the batter.
- Bake at 350 degrees for 35 minutes or until an inserted knife comes out clean.
