Gluten-Free Chocolate Chip Banana Bread

Ingredients
  • 3 overripe bananas
  • 2 eggs
  • 1 ¼ cup sugar
  • ¼ cup butter, melted
  • 1 teaspoons vanilla extract
  • 2 cups gluten-free flour
  • ½ cup cocoa powder
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ teaspoon guar or xanthan gum
  • 1 cup chocolate chips (I used dark chocolate – perfection!)
  • 1 cup chopped pecans or walnuts (optional)
Directions
  1. Preheat oven to 350º
  2. Mash bananas.
  3. Beat in eggs, sugar, butter, and vanilla.
  4. Mix dry ingredients together in a large bowl.
  5. Stir in banana mixture, and mix well.
  6. Fold in chocolate chips.
  7. Divide between two greased loaf pans.
  8. Bake in center of oven for 30 minutes, or until a toothpick comes out clean when inserted into he center of loaf.
  9. Remove from oven and let cool for ten minutes.
  10. Loosen edges of loaves from the pan, and gently invert onto a cooling grid. Or onto your hand so that you can turn it right-side-up on the cooling grid.
  11. Cool, slice, and enjoy!
