Pecan Shortbread Cookies

Ingredients
  • 2 sticks of butter, softened
  • 1 cup brown sugar
  • 4 cups all purpose flour
  • 1 cup finally diced pecans
  • 1 tsp. vanilla
  • Instructions

Directions
  1. Preheat oven to 350.
  2. Line baking sheet with parchment paper or a silpat mat.
  3. Whip softened butter in stand or hand mixer until fluffy.
  4. Mix in brown sugar and vanilla to combine well.
  5. Add flour, 1 cup at a time until thoroughly mixed.
  6. Stir in pecans.
  7. Flour counter or work surface lightly.
  8. Press dough out to about ⅓" thickness, you can use a rolling pins or just press with your hands.
  9. Cut out in any shape you desire,transfer to baking sheet.
  10. Bake for 9-12 minutes until edges are golden brown.
