Pecan Shortbread Cookies

- 2 sticks of butter, softened
- 1 cup brown sugar
- 4 cups all purpose flour
- 1 cup finally diced pecans
- 1 tsp. vanilla
- Instructions

- Preheat oven to 350.
- Line baking sheet with parchment paper or a silpat mat.
- Whip softened butter in stand or hand mixer until fluffy.
- Mix in brown sugar and vanilla to combine well.
- Add flour, 1 cup at a time until thoroughly mixed.
- Stir in pecans.
- Flour counter or work surface lightly.
- Press dough out to about ⅓" thickness, you can use a rolling pins or just press with your hands.
- Cut out in any shape you desire,transfer to baking sheet.
- Bake for 9-12 minutes until edges are golden brown.
