Gluten-Free Dairy-Free Chocolate Chip Cookies

Ingredients
  • ½ cup packed brown sugar
  • ¼ cup + 2 tablespoons granulated sugar
  • ½ cup Smart Balance Original Buttery Spread, chilled
  • 1 teaspoon gluten-free vanilla
  • 1 egg
  • ⅔ cup white rice flour
  • ⅔ cup tapioca flour
  • ¼ cup potato starch
  • 1½ teaspoon xanthan gum
  • ½ teaspoon gluten-free baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup dairy-free chocolate chips
Directions
  1. Heat the oven to 375°F. In large bowl, cream the brown sugar and granulated sugar with the Smart Balance using an electric mixer on low speed. Stir in the vanilla. Beat in the egg until light and fluffy.
  2. In medium bowl, mix the rice flour, tapioca flour, potato starch, xanthan gum, baking powder, baking soda and salt until thoroughly blended. Add the flour mixture to the sugar mixture. Stir until fully incorporated. Stir in chocolate chips.
  3. On a lightly greased cookie sheets, drop dough by tablespoonfuls about 2 inches apart.
  4. Bake for 8 - 10 minutes or until the cookies begin to brown. Cool for 1 to 2 minutes on the cookie sheets; remove the cookies from the cookie sheets to cooling racks. Store in a tightly covered container.
