Lemon Poppy Seed Overnight Oatmeal

- ½ cup of rolled oats
- ½ cup of lemon Greek yogurt
- ⅓ cup vanilla almond milk (or cashew milk)
- 1 teaspoon lemon zest
- 1 teaspoon of poppy seeds
- Modifications: If you use unsweetened almond milk or regular milk, add 1 tsp of honey and ¼ tsp of vanilla.
- Zest one lemon
- Add the rolled oats to a mason jar or another lidded container.
- Add the vanilla almond milk and Greek yogurt. Stir until thoroughly mixed.
- Add the lemon zest and poppy seeds. Stir until thoroughly mixed and seal the container.
- Refrigerate overnight or until the liquid is absorbed and oats are soft (6-8 hours). Serve cold.
