Adopt a Gluten Free Blogger: Living Free

I was excited to read about Adopt a Gluten Free Blogger at The Daily Diatribe last month. When I adopted Aubree Cherie of Living Free, I intended to make her Sweet Potato Quiche with Cashew Crust, but life got in the way. A horrible virus swept through our house; I spent a week  nursing sick children and then spent a week sick in bed. One evening as the kids  were beginning to feel better, they started complaining about the lack of sweets in the house.  I was beginning to feel run down, so I needed a recipe that I could whip up easily with the ingredients I had on hand. Aubree Cherie’s Sweet Peanut Butter Treats fit the bill.  Besides being gluten free, they are dairy free, egg free, and sweetened with honey. Fast, easy, and guilt free: A dessert trifecta!
May 2010 364 Aubree Cherie suggests putting the dough in mini-muffin pans, but I used regular size muffin pans. If a little is good, a lot is better, right?
May 2010 366 Although, they are called Sweet Peanut Butter Treats, they taste like a peanut butter oatmeal cookie. Yum!
