This evening I am sharing my Grilled Chicken and Vegetable Fajita recipe at $5 Dinners. Two of my kids are not crazy about peppers, so I replace some of the peppers with vegetables from my garden.

  1. Love the idea of using squash in them. I abandon green peppers long ago for the bright, colorful yellow or oranges bell peppers, which my kids were more agreeable to. I also use quartered mushrooms to replace some of the meat–this dish is so versatile! Great recipe, thanks!
