Menu Plan – Week of October 8th

I was out of town most of last week and am looking forward to getting back in the kitchen and making some comfort food! I am out of chicken stock, so I am going to roast a chicken which will provide me with bones to make broth and lots of leftover chicken that I can use to create fast and easy dinners.

Monday – Rapidly Roasted Herb Crusted Chicken with Vegetables

Tuesday – Use the chicken bones to make broth in a slow cooker. Use some of the leftovers chicken to make Italian Chicken and Rice Casserole. Serve it with a garden salad.

Wednesday – Use leftover chicken to make Curried Chicken Pasta Salad. Serve with a garden salad.

Thursday – Tacos, Black Beans, and Mexican Rice

Friday – Grilled Steak, Green Beans with Garlic, and Herb Roasted New Potatoes

Saturday – Use leftover taco meat, rice, and black beans to make Enchiladas. Serve with a garden salad.

Sunday – Use leftover steak to make a Steak and Artichoke Frittata. Serve with Strawberry Spinach Salad.

  1. I definitely want to work on some Fall menu plans which I can repeat rather than scratching my head each week. Your roast chicken recipe looks great. And I’m a huge fan of chicken/pasta salad with a little curry powder. I usually add something fruity (like a little peach or mango) to mine.

  2. I just made chicken for Randy’s dinner for the next two nights. Oh it smells so yummy!
