This mix of gluten-free flours that can be combined to make an all-purpose gluten-free flour that can be used in recipes in place of all-purpose flour.
I use this flour for cookies, muffins, and quick breads.
2 1/2 cups brown rice flour
1 1/2 cup tapioca flour
1/2 cup potato starch
1 1/4 teaspoon xanthan gum
Measure all ingredients into a medium bowl (I use an 8 cup measuring cup, because I can pour with it); mix well. Then sift the ingredients together into a sealable container.
