Gluten-Free Chicken and Veggie Wraps

Wraps are my new favorite busy night meal. I can have all of the ingredients prepped and in the refrigerator and each person can make their own wrap when they can squeeze a meal into their schedule. This recipe is inspired by the Chicken And Veggie Wraps by Grace at Life 2 Seriously.

Brown Rice Tortillas
Garlic Hummus
3 –4 ounces of grilled or broiled chicken per wrap
1 Tablespoon of chopped onion per wrap
1/2 cup greens per wrap
1 Tablespoon per wrap of chopped carrots, celery, and/or peppers (optional)

Warm the tortillas in the microwave to make them more pliable.  Spread hummus on the tortillas. Layer the chicken, onion, and greens in the center of the tortilla. Sprinkle with celery, carrots and/or peppers. Roll up the tortilla.

  2. Thanks, Alea! I like your idea of using hummus (better than mayo). We now eat a version of these wraps at least once a week too.

    Plaster cookies have been a fav of mine for many years. Grandmother recipes are simply fantastic!

  3. You're so right. Wraps are a great busy night meal and I often forget about them. I guess it's because I've not been too happy with brown rice tortillas, but I ought to try them again.

  4. Linda- I have found that Trader Joe's Brown Rice Tortillas work pretty well when fresh. I also like corn tortillas, but a lot of people don't like eating them unless they have been fried. Heating corn or rice tortillas makes them more pliable.
