Wraps are my new favorite busy night meal. I can have all of the ingredients prepped and in the refrigerator and each person can make their own wrap when they can squeeze a meal into their schedule. This recipe is inspired by the Chicken And Veggie Wraps by Grace at Life 2 Seriously.
Brown Rice Tortillas
3 –4 ounces of grilled or broiled chicken per wrap
1 Tablespoon of chopped onion per wrap
1/2 cup greens per wrap
1 Tablespoon per wrap of chopped carrots, celery, and/or peppers (optional)
Warm the tortillas in the microwave to make them more pliable. Spread hummus on the tortillas. Layer the chicken, onion, and greens in the center of the tortilla. Sprinkle with celery, carrots and/or peppers. Roll up the tortilla.
