Gluten- Free Hummingbird Bundt Cake

A Hummingbird Cake is usually a three layer cake with frosting between each layer, the top and sides. I will admit to being motivated in large part by laziness when I adapted this Traditional Hummingbird Cake recipe to make it a Bundt cake. However, in the process I also made it a little less decadent. I replaced half of the oil with applesauce and since applesauce is sweet, I cut the sugar in half as well. It is just topped with frosting, so I only used a third as much frosting as I would if I were making a cake. If you wanted to reduce the sugar even more, you could dust the top with powdered sugar in place of the frosting and chopped pecans.

    My mom has made hummingbird cake for years. Hers is never a three layer cake, though, so that was new to me. I think she usually makes it in a rectangular pan. Anyway, I have thought many times that I should try making a gluten-free version, but just never have. Your modifications sound like good ones. Thanks for sharing this.

    Alea, that's gorgeous! I can just imagine how divine it tastes. I'd be as happy as a hummingbird eating it for sure. ;-) Oh, and around here, it's made as a three-layer cake, too. I far prefer your Bundt version though. I just got a stoneware Bundt pan from Pampered Chef, but haven't tried it yet. Hmmm.
