Gluten-Free Sweet Potato Muffins

September2010 183 You would think that after I made 5 batches of Sweet Potato Donuts and a large batch of Sweet Potato Pancakes that my kids would be tired of Sweet Potatoes, but the requests for sweet potatoes keep coming in. My daughter wants me to try replacing sweet potatoes in all of my pumpkin recipes. Since the stores are out of pumpkin puree and the pumpkins in my garden are not quite ripe, I have been indulging her request.

Here is my recipe for Gluten-Free Sweet Potato Muffins.

    Those look lovely, Alea! I can't believe that pumpkin is still in short supply. Now that's a bummer! Will definitely have to wait for fresh then. But, as you've shown, sweet potato works very nicely, too. :-)

    I'm not supposed to have potato starch or cornstarch…do you have a substitute in mind for the potato starch?

    This looks good. The ingredients say baking powder, the instructions say baking soda. Can you clarify.

    Also, do you taste the baking soda or powder bitterness, it just seems like a lot (1 TBLS) for one batch of muffins???
