Tonight I am continuing “Operation Covert Squash” and sharing my Squash Calazone recipe at $5 Dinners. Even though my family is beginning to experience “squash fatigue” they lined up for seconds helpings of this dish.
I am using calazone to use up some of my excess squash, but you can replace the squash with anything you need to get rid of. The cheese and herbs work a magic and make just about anything appealing. Calzones are a great way to use up extra produce from your garden, but they are also a great way to use up leftovers. Have some leftover stir fry or ratatouille? Replace the veggies in my recipe with 2 cups of your leftovers and you have a unique creation and your family will not even realize that they are eating leftovers.

I guess if calzone can use up leftovers, pizza will work for your excess squash too.
