Repurposing Leftover Ham and Slow Cooker Split Pea Soup

This year I only cooked for our immediate family on Christmas day, so I tried to find a small ham. The smallest nitrate-free ham I could find was nine pounds. This has left me with a lot of leftover ham…

This evening I shared my newest recipe for repurposing leftover ham at $5 Dinners: Scalloped Sweet Potatoes with Ham.  But that only used up 1 1/2 cups of diced ham leaving me with lots more to use up! My family enjoyed the combination of sweet potatoes and ham seasoned with ginger and basil so much that it will be on my menu again next week. However, even 2 batches will not make much of a dent in my supply so I thought I would share some of the ways that I will be using up the leftover ham. Ham freezes well, so I will stretch the leftovers over the next couple of weeks.

The ham bone can be used in soups like Pink Bean and Ham Soup, Black Bean and Ham Soup or Split Pea Soup. I will be making Split Pea Soup with this ham bone because it is my husband’s favorite soup.

Slow Cooker Split Pea Soup

Ingredients:

1 pound bag of dried peas
1 meaty ham bone 
2 stalks of celery, chopped
2 carrots, chopped
1/2 onion, chopped
3 cloves of garlic minced
2 Tablespoons parsley
2 teaspoons basil
2 teaspoons marjoram
1/2 teaspoon pepper
5 – 6 cups water
1/2 cup sherry (optional)

Directions:

It is nice to time meals for when you want to serve them, so I have listed 3 different cooking times. Which version I use depends on when I remember to start dinner.Smile

Fastest Version:

Put peas in a large pot over a high heat and bring to a boil. Turn off heat and put lid on pot. Let sit for one hour.

Drain peas and place them in the crock pot. Add all of the other ingredients, using only 5 cups of water. Place lid on crock pot,  and cook on high for 4 hours. Remove meat from bone and discard bone. You can mash the peas, spoon them into the blender, or use an immersion  blender to make the soup creamier.

Fast Version:

Fill glass bowl with 6 cups of water and microwave on high for 5 minutes or until it is boils.

Put all ingredients in crock pot. Pour hot water over them. Place lid on crock pot and cook on high for 5 hours. Remove meat from bone and discard bone. You can mash the peas, spoon them into the blender, or use an immersion  blender to make the soup creamier.

Slow version:

Place all ingredients in crock pot including 6 cups of hot tap water. Place lid on crock pot and cook on low for 8 hours. Remove meat from bone and discard bone. You can mash the peas, spoon them into the blender, or use an immersion  blender to make the soup creamier.

Makes 8 servings. This soup can be frozen.
