Salvaging Dry Rice: Fried Rice Recipe

I have included a basic fried rice recipe, but you can easily adapt it to the amount of rice you have leftover and whatever ingredients you have on hand.

2 green onions, chopped
2 eggs
1 T oil for frying eggs; 2 T oil for frying rice
~4 cups leftover cooked rice
1 – 2 T soy sauce
~1/2 frozen peas and carrots, thawed
salt and pepper to taste

Beat eggs with salt and pepper. Fry onions in oil until soft; add eggs. Cook until they are lightly scrambled. Remove the eggs. Add 2 T oil, when the oil is hot add the eggs and stir fry for 3- 4 minutes. Add soy sauce, egg, and vegetables. Mix thoroughly and cook until the vegetables are hot.

I don’t have a wok, so I just use a large frying pan.
