Southwest Steak Salad with Honey Lime Dressing
This week I will be sharing a salad recipe each evening. I don’t want you to think I have reformed and am going to get all healthy on you; this week of salads is one of necessity. All of my lettuce is getting ready to go to seed, as is my Swiss chard, so I am trying to use it all up before it goes bad. Which would you prefer, a salad recipe each night or a horrid food waste picture on Friday? That’s what I thought!
Southwest Steak Salad with Honey Lime Dressing
3/4 – 1 pound steak, thinly sliced
1 red bell pepper, chopped (I used 1/2 red and 1/2 yellow pepper)
1 medium onion, chopped
2 cloves garlic, minced
1 jalapeño pepper, seeds removed and chopped
12 cups mixed lettuces, torn
1 pint cherry tomatoes
I carrot, julienned
3 – 4 stalks of celery, chopped
5 –6 radishes, sliced
Brown steak with pepper, garlic, and onions until meat is cook through and onions are translucent. Remove the steak mixture from heat and set aside while you make Honey Lime Dressing and prepare the vegetables. Mix greens with steak mixture. Sprinkle cheese on top and then coat with the dressing.
Honey Lime Dressing
½ teaspoon mustard powder
1 teaspoon garlic powder
1 tablespoon onion, minced
juice of 2 limes ~ ¼ cup**
2 tablespoons honey
½ teaspoon ground cumin
2 tablespoons chopped cilantro, no stems
1/2 cup extra light olive oil
dash pepper
Place all the ingredients except for the oil in a food processor to combine. Slowly add in oil and process until creamy. Makes 6 servings.
**To get twice as much juice from your lemons and limes microwave them for about 10 seconds before you juice them. For more kitchen tips visit Kitchen Tip Tuesday at Tammy’s Recipes.

I haven't experimented with making salad dressing, other than the blue cheese dip that I once posted. Everyone in my family likes a different kind of dressing, so it's easier to use the bottled ones!
I was just telling my husband that we need to BBQ some steak from the 1/4 of a cow that we bought. This sounds awesome.
The only true homemade dressing I make is by mixing mustard, honey and olive oil. I'm the only one that eats it though. I make a semi homemade ranch dressing though.

Even with eating salad almost every day and giving away as much lettuce as we can, we will not be able to get rid of it all this year. We have had an *incredible* yield this year (same with our kale), but unfortunately I think a lot of both is going to end up in the compost.
This salad would be a great way to use a small steak I've got in the freezer!

First off let me say I love the name of your blog ;D I am following you from Tasty Tuesday. I love homemade dressing but I've never thought to make it myself. One thing I really like on salad is chili, very tasty! Thanks for sharing your recipe I bet my picky hubs would actually eat this.
