Linguini and Clam Sauce

Ingredients
  • 16 oz. Linguine (I used GF Fettuccine)
  • 1 can of chopped clams
  • 1 28 oz. can diced tomatoes
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 teaspoon minced garlic
  • a pinch of red pepper flakes
  • salt and pepper to taste
  • 2 teaspoons Italian Seasoning mix (optional - this was my adaptation)
Directions
  1. Cook linguine according to package directions.
  2. In a large skillet, heat oil and add onion, cook until onions are translucent.
  3. Add garlic and red pepper to the onion and cook for 30 seconds.
  4. Add tomatoes and Italian seasoning mix to the onion mixture. Reduce heat to medium-low and simmer for 15 - 20 minutes. (If the liquid starts to cook off, lower the temperature and cover with a lid).
  5. Add clams and salt and pepper to taste and cook until clams are heated through, approximately 5 minutes.
  6. Toss the clam sauce with the pasta and serve immediately.
