Glazed Carrots
  • 2 - 2½ pounds carrots
  • 2 tablespoons butter
  • 1 tablespoon sugar
  • 2 teaspoons parsley (optional)
  • pinch of salt
  • water
  1. Cut carrots into ½ inch thick pieces.
  2. Melt butter and glaze sugar in it.
  3. Pour approximately ½ cup of water of enough to completely dissolve sugar. Add carrots and cook over a medium flame.
  4. Add salt and a little water as necessary, constantly stirring carrots. The liquid should always be at a minimum and should be completely dissolved when carrots are “al dente”.
  5. To finish, add parsley.
