Vegetable Gratin Skillet

Ingredients
  • 1 small Eggplant
  • 2 yellow Squash
  • 2 Zucchini
  • 4-5 small red potatoes
  • 1 small Onion
  • 3 cloves Garlic
  • 2 Tbsp. Olive Oil
  • 2 Tsp. Basil
  • 2 Tsp. Oregano
  • ¼ cup grated Parmesan Cheese
  • Salt and Pepper to taste.
Directions
  1. Dice vegetables into bite size, uniform pieces.
  2. Preheat oven to 425 degrees.
  3. Toss chopped vegetables in skillet with Olive Oil, Basil, Oregano, Parmesan, Salt, and Pepper, turning to coat well. Lay garlic on top of vegetables.
  4. Bake for 25-30 minutes until vegetables are cooked through and golden.
  5. Peel garlic, crush and stir into vegetables.
