Lemon Pepper Poached Chicken is simple and quick to make. It is delicious, full of flavor, and so juicy!
  • Ingredients:
  • 1 pound of boneless chicken pieces, trimmed
  • 1½ - 2 cups chicken broth
  • ¼ cup lemon juice
  • 1 tbsp garlic infused vinegar
  • 2 tsp lemon pepper
  • sea salt to taste
  • 2-3 whole lemons
  1. Sprinkle both sides of chicken pieces with lemon pepper and sea salt. Place in the bottom of a heavy skillet.
  2. Add lemon juice & vinegar to the chicken first, then add enough chicken broth to completely cover the chicken in liquid.
  3. Slice the lemons into ¼" slices and lay over top of chicken pieces.
  4. Cover and bring to a boil over medium high heat.
  5. Once the liquid begins to boil, reduce heat and simmer for 2 minutes.
  6. Remove from heat and let set for 15-20 minutes without removing the lid.
  7. Discard the lemons from the top of the chicken. Serve chicken over roasted veggies and rice!
