Steak and Potato Soup

- 2 cups steak
- 3-4 medium russet potatoes, rough chopped
- 1 cup carrots, chopped or sliced into coins
- 10 oz. can diced tomatoes
- 3 cups beef broth (How make Beef Broth)
- 1 small onion, diced
- 2-3 cloves garlic, crushed
- ¼ cup grated Parmesan cheese
- 1 tsp. Oregano
- salt and pepper to taste
- Use leftover steak or prepare steak by grilling, broiling, or pan frying it. Dice the steak into bite sized pieces.
- In a large soup pot sauté olive oil, garlic and diced onion, until golden brown.
- Stir in diced potatoes, cook for 2 minutes.
- Add steak, carrots, diced tomatoes, broth, oregano, salt and pepper- simmer over low for 45 minutes.
- Add grated parmesan cheese.
