Steak and Potato Soup

  • 2 cups steak
  • 3-4 medium russet potatoes, rough chopped
  • 1 cup carrots, chopped or sliced into coins
  • 10 oz. can diced tomatoes
  • 3 cups beef broth (How make Beef Broth)
  • 1 small onion, diced
  • 2-3 cloves garlic, crushed
  • ¼ cup grated Parmesan cheese
  • 1 tsp. Oregano
  • salt and pepper to taste
  1. Use leftover steak or prepare steak by grilling, broiling, or pan frying it. Dice the steak into bite sized pieces.
  2. In a large soup pot sauté olive oil, garlic and diced onion, until golden brown.
  3. Stir in diced potatoes, cook for 2 minutes.
  4. Add steak, carrots, diced tomatoes, broth, oregano, salt and pepper- simmer over low for 45 minutes.
  5. Add grated parmesan cheese.
