Vegetable Rice Cups + Tips for Cooking with Kids
 
Ingredients
  • 1¼ cups cooked Uncle Ben's Instant Brown Rice
  • 2¼ cups vegetable broth
  • 1 cup cheddar cheese, shredded
  • 1 cup frozen mixed vegetables
  • 2 green onions, thinly sliced
  • 2 eggs, beaten
Directions
  1. Preheat oven to 400 degrees.
  2. Grease 12 muffin cups.
  3. Combine rice and vegetable broth in a medium sauce pan.
  4. Bring to a boil. Reduce heat and cover. Simmer for 10 - 12 minutes or until broth is fully absorbed.
  5. Remove from stove and add green onions and frozen mixed vegetables.
  6. Stir in cheese and eggs.
  7. Divide mixture evenly into muffin cups.
  8. Bake for 30 minutes.
