Vegetable Rice Cups + Tips for Cooking with Kids
- 1¼ cups cooked Uncle Ben's Instant Brown Rice
- 2¼ cups vegetable broth
- 1 cup cheddar cheese, shredded
- 1 cup frozen mixed vegetables
- 2 green onions, thinly sliced
- 2 eggs, beaten
- Preheat oven to 400 degrees.
- Grease 12 muffin cups.
- Combine rice and vegetable broth in a medium sauce pan.
- Bring to a boil. Reduce heat and cover. Simmer for 10 - 12 minutes or until broth is fully absorbed.
- Remove from stove and add green onions and frozen mixed vegetables.
- Stir in cheese and eggs.
- Divide mixture evenly into muffin cups.
- Bake for 30 minutes.
