Place graham crackers in a zippered bag by tapping firmly with a spoon or put them in a food processor, set aside.
Scrub apples well under water, then dry completely with a clean, dry towel.- This removes all the wax and residue from your apples and will make your toppings adhere better.
Melt unwrapped caramels in pan over medium high heat, stirring constantly until completely melted. Or you can heat in microwave safe dish in 30 second increments, stirring each time.
Use a spoon to drizzle caramel all over apples.
Set apples on waxed paper and let caramel set. While you are waiting, melt white chocolate in a double boiler on the stove or using the same method as you did for the caramels- in 20 second intervals until smooth and melted. Stir in apple pie spice until well combined.
Drizzle white chocolate over caramel apples.
While still wet, roll bottom half of apples in crushed graham crackers, sprinkle tops lightly with cinnamon and sugar mixture.
Set apples on wax paper lined counter to harden. Cover in plastic wrap.
