Cajun Tofu and Pasta Skillet
 
Ingredients
  • 1 - 12.3 oz. package Mori-Nu Silken Tofu Firm, cut into bite size pieces
  • 1 tablespoon Cajun Spice mix
  • 1 tablespoon olive oil.
  • 8 oz. rotini pasta
  • 1 medium bell pepper, diced
  • 1 medium red onion, diced
  • 1 - 16 oz. bag frozen black-eyed peas, thawed
  • ½ cup vegetable broth
Directions
  1. Cook pasta according to package directions.
  2. While the pasta is cooking, pour olive oil in skillet. Add tofu pieces. Sprinkle the tofu with Cajun spice mix and toss to coat. Add bell pepper and onion and cook over a medium flame until the onion is translucent. Approximately 4 -5 minutes.
  3. Once the pasta is done, drain.
  4. Add pasta, black-eyed peas, and vegetable broth to the skillet and cook until the black-eyed peas are heated through. Approximately 2 - 3 minutes.
