Pumpkin Spice Lactation Cookies

Ingredients
  • • 2 cups all purpose flour
  • • 1 cup oats
  • • 1 ½ cups brown sugar
  • • 1 cup sugar
  • • 1 Tbsp. pumpkin pie spice
  • • 3 Tbsp. brewer’s yeast
  • • 2 Tbsp. flax meal
  • • 1 tsp. baking soda
  • • ½ tsp. salt
  • • 1 cup butter, softened
  • • 1 egg
  • • 1 tsp. vanilla extract
  • • 1 15 oz. can pumpkin puree
Directions
  1. ) Preheat your oven to 350°.
  2. ) Mix the dry in ingredients in a bowl.
  3. ) Combine the butter, egg, vanilla, and pumpkin puree in a separate bowl.
  4. ) Slowly mix the pumpkin mixture into the dry ingredients.
  5. ) Scoop heaping tablespoon-sized portions of dough onto a cookie sheet. Leave about 1 ½ to 2 inches between each scoop.
  6. ) Bake for 15 minutes. Baking times may vary.
  7. ) Remove from the oven and allow to cool
