The perfect sugar cookie recipe with just a hint of lemon! Perfect for rolling out for cutouts to decorate.
Ingredients
1 cup butter, unsalted at room temperature
1 cup granulated sugar
2 eggs at room temperature
½ tsp pure vanilla
1 tsp lemon extract
3 ½ cups all purpose flour
½ tsp baking powder
½ tsp baking soda
Directions
Mix together the butter, sugar, eggs, vanilla, and lemon extract in the bowl of a stand mixer. The ingredients should be creamed together.
In another bowl sift together the dry ingredients - flour, baking powder, baking soda, and salt. Gradually add this to the butter mixture.
Divide dough into half. Flatten each half into a 2” thick disc and wrap in plastic wrap. Refrigerate for 1-2 hours.
Preheat oven to 400 Degrees.
Use a silicone rolling pin to roll dough out to approximately ¼” thickness. This works best on a well floured surface, parchment paper, or bakers mat. Cut dough into desired shapes and place them on ungreased cookie sheets, leaving 1-2 inches between.
Bake for 4-6 minutes in preheated oven. Allow to cool for 3-5 minutes then transfer to wire cooling rack to cool completely.
