Vegetarian Orange Chicken

- 1 tablespoon olive oil
- 2 tablespoons vegetable broth
- 2 tablespoons orange juice
- 1 cup sliced carrots
- 1 green onion, thinly sliced
- 1 teaspoon honey
- 1 teaspoon freshly grated ginger
- 1 package Mandarin Orange Crispy Chick’n
- ½ cup pineapple chunks
- sesame seeds
- 2 cups cooked rice
- Place the sauce packet from Mandarin Orange Crispy Chick’n in a bowl of warm water.
- Place the oil, broth, orange juice, and honey in a large skillet. Add carrots, onion slices, and ginger and cook over medium flame for 4 minutes.
- Add frozen Mandarin Orange Crispy Chick’n to the carrots and cook for 6 - 8 minutes or the chick'n is browned.
- Add pineapple and cook until heated through.
- Top with sesame seeds and green onion slices and serve over rice.
