Vegetarian Orange Chicken

  • 1 tablespoon olive oil
  • 2 tablespoons vegetable broth
  • 2 tablespoons orange juice
  • 1 cup sliced carrots
  • 1 green onion, thinly sliced
  • 1 teaspoon honey
  • 1 teaspoon freshly grated ginger
  • 1 package Mandarin Orange Crispy Chick’n
  • ½ cup pineapple chunks
  • sesame seeds
  • 2 cups cooked rice
  1. Place the sauce packet from Mandarin Orange Crispy Chick’n in a bowl of warm water.
  2. Place the oil, broth, orange juice, and honey in a large skillet. Add carrots, onion slices, and ginger and cook over medium flame for 4 minutes.
  3. Add frozen Mandarin Orange Crispy Chick’n to the carrots and cook for 6 - 8 minutes or the chick'n is browned.
  4. Add pineapple and cook until heated through.
  5. Top with sesame seeds and green onion slices and serve over rice.
