Black Bean Chocolate Pudding

Ingredients
  • 1 can reduced sodium black beans
  • ⅓ cup unsweetened almond or soy milk
  • 2 tablespoons cocoa powder
  • 2 tablespoons pure maple syrup
  • 2 teaspoons coconut oil, melted
  • 1 individual packet of stevia
  • Optional: bananas
Directions
  1. Rinse and drain the beans and pour them into a high power blender or food processor.
  2. Add the remaining ingredients and puree until smooth.
  3. Refrigerate or serve. Top individual servings with banana slices if desired.
