Turkey Burger Stuffed Manicotti

Ingredients
  • Manicotti Shells
  • 2-3 lbs Ground Turkey
  • 1 Small Onion, Diced
  • 2-4 Cherry Tomatoes, Halved
  • Romaine & Arugula Lettuce, Chopped
  • ½ Cup Cheese Sauce (nacho)
  • Kosher Salt (To taste)
  • Fresh Cracked Black Pepper (To taste)
Directions
  1. Fill a stock pot with water and set to a roiling boil, add a pinch of salt and add Manicotti. I add a drizzle of olive oil to keep the pasta from sticking together. Stir pasta for a minute or two. When pasta is al dente drain in a colander. Place pasta in ice cold water to stop the cooking process. Set aside.
  2. In a medium skillet sauté diced onions. After onions are translucent add ground turkey and brown. When meat is finished set aside.
  3. Cut the Cherry Tomatoes in half and chop lettuce. Set aside.
  4. Heat glass jar of cheese sauce in the microwave until contents can be easily poured. Be careful the glass and cheese will be extremely hot. Use an oven mitt.
  5. Next, stuff Manicotti with meat, assemble on plate and drizzle with cheese sauce. Add a generous amount of chopped lettuce and garnish with tomatoes. Super easy and delicious.
