Chili Dog Cornbread Muffins

  • 1 Box of Jiffy Cornbread Mix
  • 1 Medium size Yellow Onion, diced
  • 1⅓ Cup of shredded Sharp Cheddar Cheese, divided
  • 1 tablespoon Cracked Black Pepper
  • 1½ Cups of your favorite Chili (store brought or made from scratch)
Additional Items:
  • Sour Cream
  • Parsley
  • Olive Oil
  1. Using a pastry brush oil muffin pan.
  2. Follow directions on the Jiffy Corn Muffin Mix, then spoon corn muffin batter into muffin tin (fill individual cupcake holes about ¾ full).
  3. Spoon in a tablespoon of chili and hotdog mixture, add ½ tablespoon of onion and top with shredded cheese.
  4. Bake in a 350 pre-heated oven for 15-minutes.
  5. Let cool and serve with a dollop of Sour Cream.
