Chili Dog Cornbread Muffins

- 1 Box of Jiffy Cornbread Mix
- 1 Medium size Yellow Onion, diced
- 1⅓ Cup of shredded Sharp Cheddar Cheese, divided
- 1 tablespoon Cracked Black Pepper
- 1½ Cups of your favorite Chili (store brought or made from scratch)
- Sour Cream
- Parsley
- Olive Oil
- Using a pastry brush oil muffin pan.
- Follow directions on the Jiffy Corn Muffin Mix, then spoon corn muffin batter into muffin tin (fill individual cupcake holes about ¾ full).
- Spoon in a tablespoon of chili and hotdog mixture, add ½ tablespoon of onion and top with shredded cheese.
- Bake in a 350 pre-heated oven for 15-minutes.
- Let cool and serve with a dollop of Sour Cream.
