1 package of medium size tortilla shells (10 count)
1 package Ortega Taco Seasoning
1 bottle of mild Taco Sauce
1 bottle of Salsa
2 Tomatillo, diced
1 medium size onion, diced
1 medium size green pepper, diced
1 medium size red pepper, diced
3-4 Grape Tomato, diced
1 package of Kraft Mexican Shredded Cheese
1 avocado
1 Sour Cream, medium
Directions
Rinse chicken and pat dry.
Place in a large bowl brush both sides of chicken with olive oil.
Next, open a package of Ortega Taco Mix and coat chicken completely with taco seasoning.
Arrange chicken pieces in a large cast iron skillet.
Place in a 350 degree pre-heated oven and bake for an hour or until juices run clear.
Take medium size flout tortillas and brush both sides with olive oil. Then place prepared tortillas into a large cupcake pan one by one.
Once chicken is finished and is cool enough to safely handle remove meat and chop. Set aside.
Pour a small amount of taco sauce into each tortilla cup, then spoon in 2 tablespoons of chopped chicken, add cilantro, diced tomato, tomatillo, pepper and onion mixture, then top with Mexican Shredded Cheese.
Bake in a 350 degree oven for 15-18
