Veggie Stir-Fry

Ingredients
  • 3 cups cooked rice
  • 1 cup fresh or frozen broccoli, chopped
  • 3 carrots, diced
  • 3 tablespoons olive oil
  • 1 cup sweet corn
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ cup soy sauce
  • 1 teaspoon honey
Directions
  1. If you don't have leftover rice, cook 1 cup of rice according to the package directions.
  2. Cut broccoli into bite sized pieces. Peel and cut carrots into thin slices.
  3. Stir-fry broccoli and carrots in olive oil and garlic powder for 4-5 minutes.
  4. Stir in rice, salt, soy sauce, and honey. Cook until heated through.
