Meatless Cheese Stuffed Shells

Ingredients
  • 1 box of jumbo shells
  • 1 8 ounce container of ricotta cheese
  • 1 8 ounce container of small curd cottage cheese
  • 1 large egg
  • 2 cup shredded mozzarella, divided
  • 10 ounce package of frozen spinach, cooked according to package directions and drained
  • 1 24 ounce jar of pasta sauce
  • fresh basil (optional)
  • salt and pepper to taste
Directions
  1. Preheat the oven to 350 degrees.
  2. Cook the jumbo shells according to the package directions, about 12-15 minutes in boiling water.
  3. Spread about 1 - 1½ cups of pasta sauce evenly on the bottom of a 9x13 baking dish.
  4. In a large bowl combine the egg, ricotta cheese, cottage cheese, 1 cup of mozzarella cheese and cooked spinach, mixing well. Add salt and pepper to taste.
  5. Remove the jumbo shells from the stove, drain and rinse with cool water.
  6. Stuff the shells one at a time and place in the 9x13 baking dish. Repeat with all shells.
  7. Top the shells with the leftover pasta sauce and shredded cheese.
  8. Bake 25-30 minutes or until heated through.
  9. Garnish with fresh basil (optional).
