Gluten-Free Chocolate Muffins with Mint Chips

- ¾ cup brown rice flour
- ½ cup tapioca flour
- ¼ cup potato starch
- 1¼ teaspoon xanthan gum
- 1 tablespoon baking powder
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 cup water
- ¼ cup cocoa powder
- ⅓ cup oil
- 1½ teaspoon gluten-free vanilla
- 1 egg
- ¾ cup mint flavored chips
- Preheat oven to 400 degrees.
- Heat water to boiling. Stir the cocoa powder into the hot water and let sit while you are mixing the other ingredients.
- In a medium bowl, combine brown rice flour, tapioca flour, potato starch, xathan gum, baking powder, granulated sugar, brown sugar, and salt.
- Add cocoa mixture, oil, vanilla, and egg. Mix well.
- Stir in mint chips.
- Divide the batter between 12 - 18 muffin cups.
- Bake at 400 degrees for 17 - 20 minutes or until an inserted toothpick comes out clean.
