Gluten-Free Chocolate Muffins with Mint Chips

Ingredients
  • ¾ cup brown rice flour
  • ½ cup tapioca flour
  • ¼ cup potato starch
  • 1¼ teaspoon xanthan gum
  • 1 tablespoon baking powder
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 cup water
  • ¼ cup cocoa powder
  • ⅓ cup oil
  • 1½ teaspoon gluten-free vanilla
  • 1 egg
  • ¾ cup mint flavored chips
Directions
  1. Preheat oven to 400 degrees.
  2. Heat water to boiling. Stir the cocoa powder into the hot water and let sit while you are mixing the other ingredients.
  3. In a medium bowl, combine brown rice flour, tapioca flour, potato starch, xathan gum, baking powder, granulated sugar, brown sugar, and salt.
  4. Add cocoa mixture, oil, vanilla, and egg. Mix well.
  5. Stir in mint chips.
  6. Divide the batter between 12 - 18 muffin cups.
  7. Bake at 400 degrees for 17 - 20 minutes or until an inserted toothpick comes out clean.
