Ginger Pear Popsicles

Ingredients
  • 1 cup coconut milk
  • 2 pears
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1½ tsp. ginger paste
  • 2 T. honey
Directions
  1. Peel and rough chop pears.
  2. Combine all ingredients in a blender or food processor and mix until well combined. You can also smash up pears well with a potato masher and whisk everything together.
  3. Pour pureed mixture into 6 popsicle molds and freeze until solid, overnight for best results.
  4. If you wish to lighten up your pear popsicles a little bit more, simply omit honey or use less. You can also swap in your favorite sweetener- sugar, agave, or xylitol.
