Carrot Cake Overnight Oatmeal

- ⅓ cup quick cook oats
- ½ cup coconut milk
- 1 carrot
- 1-2 tablespoons raisins
- 1-2 tablespoons pecans or walnuts
- ½ teaspoon vanilla extract
- 1 - 2 teaspoons raw honey to taste
- Grate carrot finely with a micro plane or the small side of your box grater. The finer you can make it the better the texture.
- Combine oats and coconut milk into a jar with a lid. Stir well.
- Add shredded carrot, raisins, nuts, vanilla, and honey to taste. Stir to mix.
- Replace the lid on your jar and place oatmeal mixture in the refrigerator. Allow to chill overnight or at least 4 to 5 hours to absorb the liquid.
