Carrot Cake Overnight Oatmeal

Ingredients
  • ⅓ cup quick cook oats
  • ½ cup coconut milk
  • 1 carrot
  • 1-2 tablespoons raisins
  • 1-2 tablespoons pecans or walnuts
  • ½ teaspoon vanilla extract
  • 1 - 2 teaspoons raw honey to taste
Directions
  1. Grate carrot finely with a micro plane or the small side of your box grater. The finer you can make it the better the texture.
  2. Combine oats and coconut milk into a jar with a lid. Stir well.
  3. Add shredded carrot, raisins, nuts, vanilla, and honey to taste. Stir to mix.
  4. Replace the lid on your jar and place oatmeal mixture in the refrigerator. Allow to chill overnight or at least 4 to 5 hours to absorb the liquid.
