Peanut Butter Trail Mix Refrigerator Oatmeal
- ½ cup old fashioned rolled oats (use gluten-free rolled oats to make it gluten free)
- ⅔ cup sweetened vanilla almond milk
- 2 Tablespoons of peanut butter
- 1 Tablespoon of mini chocolate chips
- 1 Tablespoon of dried cranberries
- 1 Tablespoon of raw unsalted sunflower seeds
- Modifications: If you use regular, unsweetened almond milk or regular milk, add 1 tsp of honey and ¼ tsp of vanilla.
- Add the rolled oats to a mason jar or another lidded container.
- Add the vanilla almond milk and peanut butter. Stir until thoroughly mixed.
- Add mini chocolate chips, cranberries, and sunflower seeds. Stir until thoroughly mixed and seal the container.
- Refrigerate overnight or until the liquid is absorbed and oats are soft (6-8 hours). Serve cold.
