Apricot Vanilla Cashew Refrigerator Oatmeal

- ½ cup old fashioned rolled oats
- ½ cup vanilla Greek yogurt (or one single serving container)
- ⅓ cup of vanilla almond milk or your choice of milk
- ¼ cup diced fresh Apricots (add more to taste)
- 2 Tablespoons chopped cashews
- ¼ tsp cinnamon
- Add the rolled oats to a mason jar or another lidded container.
- Add the almond milk, yogurt and cinnamon and mix with the oats.
- Add apricots to taste. You can substitute peaches or nectarines for the apricots.
- Add the cashews and stir until thoroughly mixed.
- Refrigerate for 6-8 hours. Serve cold.
