Ingredients
  • 2 cups oat flour
  • 2 tablespoon coconut oil
  • 1 egg, large
  • ½ cup fresh parsley
  • ¼ cup fresh mint leaves
  • 3 drops peppermint essential oil
  • 1-2 tablespoon water
Directions
  1. Preheat oven to 350°.
  2. Line a baking sheet with foil or a silpat mat.
  3. Now you can either chop your fresh herbs or toss them in your coffee grinder/food processor and mix until well chopped but not liquid
  4. Combine oat flour, egg, coconut oil, chopped herbs, and essential oil in a large bowl and stir until well mixed.
  5. Dough will be thick and sticky. Add water a couple tablespoons at a time until consistency is good for rolling out. This varies slightly depending on altitude, moisture in your herbs, etc.
  6. Roll dough out onto a floured surface (I use additional oat flour) and cut out in desired shapes. These dog bone cookie cutters are really fun! You can make these as small or as large as you like depending on the size of your pupsTransfer to prepared baking sheet. Using a spatula helps keep their shape. Bake for about 30 minutes or until lightly golden brown. Allow to cool completely then place in an airtight container in the fridge for up to 10 days.
