Apple Walnut Salad

  • 6 cups salad greens
  • 2 large apples, cored and cut into bite-size pieces
  • 4 pieces of cooked bacon, crumbled
  • ¼ cup chopped walnuts
  • 2 tablespoons grated Parmesan cheese
Dressing Ingredients:
  • ¼ cup walnut oil (or other mildly flavored oil)
  • ¼ cup apple juice
  • 1 tablespoon apple cider vinegar ( or your favorite vinegar)
  • 1 teaspoon dijon mustard (or ½ t. dry mustard)
  • ¼ teaspoon coarse ground black pepper
  1. In a small jar or cruet combine all of the salad dressing ingredients and shake well.
  2. In a large bowl, combine the greens, apples, bacon, walnuts, and cheese.
  3. In a small jar (with a tight-fitting lid) combine the oil, apple juice, vinegar, mustard, and pepper.
  4. Shake the dressing well.
  5. Drizzle the dressing over the salad.
  6. Toss thoroughly and serve immediately.
