Grilled Herb Shrimp & Savory Avocado Appetizer

Ingredients
  • Herb Grilled Shrimp Marinade Ingredients:
  • ½ cup fresh parsley chopped
  • ¼ cup extra virgin olive oil
  • 1 medium shallot minced
  • 1 tablespoon fresh savory chopped
  • 1 tablespoon fresh thyme chopped
  • 2 cloves garlic minced
  • 2 tablespoons fresh rosemary leaves minced
  • 3 tablespoons fresh lemon juice
  • ½ teaspoon sea salt or to taste
  • ¼ teaspoon freshly cracked black peppercorns or to taste
  • Savory Avocado Ingredients:
  • 3 ripe avocados
  • 2 sweet corn cob kernels
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoon horseradish
  • 3 cloves garlic
  • 1 medium red onion or Spanish onion minced
  • 1 tablespoon fresh squeezed lemon juice
  • 1 tablespoon of unsalted butter
  • ¼ cup cilantro chopped
  • ½ teaspoon sea salt
  • ⅓ teaspoon freshly ground black peppercorns
Directions
  1. Herb Grilled Shrimp Marinade Directions:
  2. In a food processor add EVOO and prepared herbs. Pulse for 2-3 times.
  3. Add freshly squeezed lemon juice, sea salt and freshly ground black peppercorns and pulse mixture a few more times.
  4. Rinse, peel and devein shrimp and place them in a medium size bowl.
  5. Pour marinade over shrimp and toss gently using your fingers to ensure the shrimp ae evenly coated.
  6. Cover bowl with plastic wrap and refrigerate up to an hour.
  7. After an hour remove the plastic wrap and allow the shrimp to stand a room temperature for 15-minutes.
  8. Savory Avocado Directions:
  9. Cut the kernels from two cobs of sweet corn.
  10. Place a medium skillet over med-high heat and butter, when the butter is melted add the corn kernels and sauté for 3 minutes. Spoon the kernels into a bowl and place it in the refrigerator.
  11. In a medium size bowl add the flesh of three avocados, EVOO, horseradish, minced garlic, minced red onion, lemon juice, sea salt and freshly cracked black peppercorns.
  12. Thoroughly mix using a fork.
  13. Serve.
