No Bake Oatmeal Butterscotch Cookies

  • ½ cup (1 stick) butter
  • ½ cup milk
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon salt (optional)
  • 1 cup butterscotch morsels (plus extra for placing top of cookies if desired)
  • 3½ cups instant oats
  1. Line a baking sheet with parchment paper and set aside.
  2. Add the butter, milk, and sugar to a large pot. Bring to a boil over medium to medium-high heat. Let boil while stirring for one minute.
  3. Remove the pot from the heat and add the butterscotch morsels, vanilla, cinnamon, and salt. Stir the mixture until the butterscotch chips have mostly melted.
  4. Add the oatmeal and stir until all of the ingredients are well combined.
  5. Using a cookie scoop or tablespoon, drop the mixture on to the baking sheet. Press 2 - 3 morsels into the top of each cookie
  6. Chill for 30 minutes to cool.
