In a mixing bowl combine pears, apples, cranberries, orange zest, lemon juice, apple pie spice, and granulated sugar.
In the bowl of a stand mixer, fitted with a whisk attachment, add rolled whole oats, all-purpose flour, sea salt, light brown sugar, granulated sugar, and 2 sticks of grated unsalted butter. Mix on low until ingredients combine and start to form into pea shapes.
Spoon pear, apple and cranberry mixture into a baking dish and top liberally with the oatmeal topping.
Place Pear, Apple & Cranberry Crisp on the center rack in the oven and bake for forty-five minutes to an hour.
Remove crisp from the oven and slater on three to four cups of marshmallow creme.
Turn oven to the high broil setting.
Place the crisp back in the oven and toasted the marshmallow until it is a golden brown.
Remove the crisp from the oven and allow it to stand for fifteen minutes.
