White Chocolate Dipped Oatmeal & Chocolate Balls

  • 1¼ cups organic whole oats
  • ½ cup extra fancy fruit cake mix
  • ½ cup medley raisins
  • ¼ cup peanut butter chips
  • 1 tablespoon chia seeds
  • ½ teaspoon pure vanilla extract
  • 2 tablespoons chopped pistachios
  • water as needed
  • ½ cup of white chocolate discs
  • ⅓ cup heavy cream
Directions

  2. Combine extra fancy fruit cake mix, raisins, and pure vanilla extract in a blender or large food processor. Pulse until mixture is combined, it will have a thick paste like consistency. Scrap down sides with a rubber spoon as necessary.
  3. Add whole oats, chia seeds, chopped pistachios, and peanut butter chips into a blender or large food processor and blend until all of the ingredients are combined, add water a little at a time to help bind the ingredients together. The mixture should be moist but not wet. Roll mixture into ping-pong size balls and set them aside.
  4. Place a saucepan over med-high heat and add heavy cream.
  5. When the heavy cream begins to steam and just begins to bubble begin adding the white chocolate discs, continue to stir until the white chocolate is melted and smooth.
  6. Remove saucepan from heat.
  7. Dip half of the balls into the melted white chocolate then dipped the white chocolate half into crushed peppermint candy cane.
  8. Serve.
