Mason Jar Pecan Streusel Coffee Cake

Ingredients
Streusel Ingredients:
  • 6 tablespoons butter, melted
  • 1 cup packed dark brown sugar
  • 1 tablespoon cinnamon
  • 1½ teaspoon ginger
  • 1½ teaspoon nutmeg
  • 1 cup chopped pecans
Coffee Cake Ingredients:
  • 2 cups all-purpose flour*
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, melted
  • ¾ cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla
  • 1 cup yogurt
  • ½ cup milk
Directions
  1. Preheat oven to 350 degrees.
  2. Butter or grease 12 wide-mouth 8-ounce mason jars.
  3. To make the streusel, combine the pecans, butter, brown sugar, and spices in a small bowl.
  4. To make the cake, whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  5. Beat the butter and sugar with an electric mixer on medium-high until light and fluffy, 2 - 3 minutes. Beat in the eggs, vanilla, yogurt, and milk scraping down the sides of the bowl as necessary.
  6. Reduce mixer speed to low and slowly add the flour mixture. Mix until thoroughly combined.
  7. Spoon half the batter into the mason jars and top with half the streusel; repeat.
  8. Place the jars on a baking sheet. Place on the center rack in the oven. Bake at 350 for 25 minutes or until an inserted toothpick comes out clean.
  9. Place jars on a wire rack to cool.
