Mixed Berry and Coconut Popsicles

Very Berry Puree and Very Berry and Coconut Popsicles
Ingredients
Puree ingredients:
  • ½ cup chopped strawberries
  • ½ cup raspberries
  • ½ cup blueberries
Popsicles Ingredients:
  • 1 (13.5 oz.) can of unsweetened full-fat coconut milk
  • 1 teaspoon vanilla extract
  • 3 tablespoons honey
  • 1 cup very berry puree (see below)
Directions
Puree Directions:
  1. Wash ingredients thoroughly then puree in a blender until smooth.
Popsicle Directions:
  1. In a large mixing bowl with a spout, combine coconut milk, vanilla, and honey and whisk until combined. Pour into popsicle molds to fill by 2 inches. Freeze for 10 minutes to create a base.
  2. After 10 minutes, you can alternate with berry puree and coconut, using a wooden skewer to swirl and create a pattern. If you don’t feel like the fuss of a swirl, you can blend the puree and coconut together from the beginning.
  3. Once full, add the popsicles sticks to your mold and freeze the popsicles until set (from 4 hours to overnight). To eat popsicles, run the molds for several seconds under hot water to allow you to easily remove the popsicles. Savor each delicious bite!
