Peanut Butter Banana Oatmeal Bars

- 1 cup ripe bananas (about 3), mashed
- 1 cup quick oats (not 1-minute oats)
- ½ cup natural peanut butter
- 3 tablespoons honey
- 1 egg, slightly beaten
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ cup semi-sweet chocolate chip morsels
- Preheat oven to 375 degrees. Spray a 9x9 baking dish with non-stick cooking spray. Add a layer of parchment paper and spray again.
- In a medium bowl, mix all ingredients together, blending well. Press batter into baking dish.
- Bake for 20 minutes or until completely set. Cool slightly and serve or refrigerate.
