Peanut Butter Banana Oatmeal Bars

Ingredients
  • 1 cup ripe bananas (about 3), mashed
  • 1 cup quick oats (not 1-minute oats)
  • ½ cup natural peanut butter
  • 3 tablespoons honey
  • 1 egg, slightly beaten
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ cup semi-sweet chocolate chip morsels
Directions
  1. Preheat oven to 375 degrees. Spray a 9x9 baking dish with non-stick cooking spray. Add a layer of parchment paper and spray again.
  2. In a medium bowl, mix all ingredients together, blending well. Press batter into baking dish.
  3. Bake for 20 minutes or until completely set. Cool slightly and serve or refrigerate.
